Finally, a night alone to catch up on a few things on my "To Do" list. The kids are with friends and Lon is at a wedding rehearsal. He will be doing the whole production tomorrow - photos and the video..with help, of course. He'll be so focused on getting ready for the event tomorrow that he won't even notice that I'm hogging the computer. I've got to do as much blogging as I can because after the wedding, he will be glued to the computer editing and being his own worst critic.

I know I've already missed a couple of Aroma Wednesdays, but I've been trying out a new recipe to share with you. I have two: a new one and an old favorite that I was going to post, but I didn't like the pictures. You'll see it below...
The New One.... Southwest Chipotle Chicken Sandwich
We eat sooo much chicken! I looked in the freezer one day, and there were about 7 different types of chicken - whole chicken, chicken breast, chicken legs..wings...you get the point.

I decided to try something different with the chicken breast. and out came this sandwich. I had bought the ciabatta bread a few weeks before. It was in the freezer, too. I don't think anything about this sandwich is healthy, but it was the bomb delish! I gotta work out some kinks with it, but look for it in upcoming Aroma Wednesday posts. |

The Old: Stuffed Cheese Ravioli w/Sundried Tomato Alfredo

This is a reallllly good dish, but I rushed through the preparations. I think one of the kids had an event that we were rushing off to, but you are going to love this one. I layer the ravioli with chicken and Alfredo sauce and bake it. Mmmmm!! |

Yummy Tidbits...

This is just good old fish and cheese grits. I always hear people say they had breakfast for dinner. So one night I came home and tried it. I think most people cook pancakes, home fries, bacon and whole nine, but I'm usually starving when I come home from work! All that would take too much time. |

It took about 10 minutes to grill the tilapia in my stove-top grill skillet, and the grits didn't take long at all. We were eating in about 20 minutes after I got home. Between this and the chicken sandwich, Austin and King swore I had cooked my two best meals ever. That's besides the time I cooked "the other chicken" (King's description of pork chops). They had never eaten pork chops up until a year ago. I can't eat pork...anymore and Lon despises it, so I don't buy it. But I couldn't let the kids go on living without knowing the goodness of a fried pork chop. :-) |
Random Extra Tidbits...

Austin and King are out of school for the summer. To keep them from devouring every morsel of food in the house, I put their snacks in ziploc bags and store them either in the refrigerator, or I leave them on the counter before I go to work. It's a good portion that they can eat all at once, or learn how to eat a little and save some for later. The rule is they can only have what's in the bag as a snack. Try it out and see if it works for your kids. | | | | | |
